Irish Soda Bread
This recipe was shared by another Self-Care bootcamper and it’s her family’s own recipe, it’s yummy!
Ingredients:
220g (8oz) gluten free wholemeal flour
180g (6oz) Flahavans multi seed oats (or regular oats)
1 beaten egg
3-4 desert spoons organic natural yoghurt
Organic whole milk*
1 heaped teaspoon baking powder
1 level teaspoon bicarbonate of soda
Sesame seeds
Method:
Mix dry ingredients in a bowl. In a pint jug add egg, yogurt and make up the rest with milk to 1 pint.
Mix in the wet ingredients (should be quite moist)
Put the mixture into a greased loaf tin and cut a cross in the top (1 inch deep). Sprinkle sesame seeds on top. Place into a preheated oven at 160 degrees and cook for 40 minutes. Then turn the bread and cook for a further 15 minutes or until a hollow sound comes from the base when you tap it.
Cool on a wire rack.
